Purpose: To review cooking and preparation techniques that will help you produce dishes that feature bold flavors with lower sodium.

Identify flavor principals and tastes of herbs and spices.
Identify cooking techniques to enhance flavors such as toasting, caramelizing, preparing marinades, etc.
